1

Pour 1 packet of active dry yeast into a large mixing bowl.

2

Add 2 tablespoons of sugar and warm water to the yeast, whisk together, and let it sit for about 10 minutes until foamy.

3

Add 10 tablespoons of sugar, 2 large eggs (whole), a splash of vanilla extract, and 1 cup of buttermilk to the yeast mixture and whisk until well combined.

4

Add bread flour to the yeast mixture along with a bit of shortening and salt, mixing until a thick paste forms.

5

Switch to an electric stand mixer and mix on low speed for 3 to 5 minutes, slowly adding all-purpose flour about 1/2 cup at a time until the dough pulls away from the sides of the bowl.

6

Transfer the dough to a floured work surface, sprinkle flour on your hands, and knead the dough for about 1 minute until smooth, adding more flour if it's too sticky.

7

Place the dough in a greased bowl with vegetable oil, flip it to coat, cover with a kitchen towel, and let it rest at room temperature for 1 to 2 hours until doubled in size.

8

Roll out the dough on a floured surface to about 1/4 to 1/2 inch thick and cut into star shapes using a star cookie cutter.

9

Heat about 8 cups of vegetable oil in a heavy bottom pot to 350°F (175°C) over medium heat.

10

Fry the star beignets in batches for about 1 minute on each side until golden brown, then remove with a slotted spoon and drain on paper towels.
