Melt butter and allow to cool slightly before adding to the egg mixture.
Pour the egg mixture into the dry ingredients and stir until just combined.
Knead the dough gently on a floured surface until smooth, about 2-3 minutes.
Cover the dough with a cloth and let it rest for 30 minutes.
Heat vegetable oil in a deep pot over medium heat until hot (about 350°F).
Shape the dough into small balls or discs.
Fry the dough pieces in batches until golden brown, about 3-4 minutes per side.
Remove beignets from oil and drain on paper towels.
Dust with powdered sugar and cinnamon before serving.
