1

Heat milk in the microwave for about 20 seconds until lukewarm.

2

Add 2 teaspoons of instant yeast and a little sugar to the milk, stir, and let sit for around 10 minutes until bubbly.

3

In a stand mixer with a dough hook, combine the milk and yeast mixture, 1 whole egg, 1 egg yolk, vanilla extract, remaining sugar, flour, salt, and ground cardamom.

4

Mix until a scraggly dough forms, then add the softened butter and knead until smooth, about 10 minutes.

5

Cover the dough with plastic wrap and let rise for at least 45 minutes until doubled in size.

6

Prepare the filling by mixing 65 g of brown sugar, 70 g of softened unsalted butter, a pinch of salt, and 1.5 teaspoons of ground cardamom until smooth.

7

Roll out the dough into a rectangle approximately 12 inches wide and 17 inches long.

8

Spread the filling on the top half of the dough and fold the bottom half over.

9

Cut the dough into 12 equal strips, about 1 inch wide.

10

Twist each strip and shape into a bun, placing them on lined baking sheets.

11

Cover the buns and let rise for another 35 to 45 minutes.

12

Preheat the oven to 375°F.

13

Brush the buns with an egg wash made from 1 beaten egg and a little water, then sprinkle with pearl sugar.

14

Bake for around 10 to 12 minutes until golden brown and puffed up.

15

Let cool on a rack for about 15 minutes before serving.
