1 teaspoon fenugreek seeds
water
1 handful shallots
1 sprig fresh curry leaves
1 green chili

pink Himalayan salt
1 cup water

Add 1 cup old-fashioned rolled oats to a bowl.

Add 1 teaspoon fenugreek seeds to the oats.

Wash and rinse the oats a couple of times until the water runs clear.

Soak the rinsed oats in water for about 10 to 15 minutes.

After soaking, rinse the oats a couple of times and place them in a strainer.

In a blender jar, add one handful of shallots, one sprig of fresh curry leaves, one green chili (broken in two), and a small piece of ginger (roughly chopped).

Add the soaked and strained oats to the blender.

Add pink Himalayan salt as needed and 1 cup of water to the blender.

Blend until the mixture reaches dosa batter consistency.

Pour the blended batter into a bowl.

Heat a cast iron dosa tawa and grease it with wood pressed gingerly oil.

Reduce the flame to the lowest and pour in 1 to 1.5 ladlefuls of dosa batter.

Drizzle a little desi ghee in the center and on the sides of the dosa.

Cook on low flame until the dosa becomes crispy.

Once the side is crisp, flip the dosa over and cook the other side until done.

Remove the dosa from the tawa and serve hot.
