800g boneless chicken cubes
1 large grated onion (squeezed)
2-3 green chillies
4-5 garlic cloves
1-inch piece ginger
1 tsp red chilli powder (or to taste)
1 tbsp crushed coriander seeds
1 tbsp roasted & crushed cumin seeds
1 tbsp crushed red chilli
1 tsp Himalayan pink salt (or to taste)
1 tsp garam masala powder
handful of fresh coriander
handful of mint leaves
2 tbsp ghee (clarified butter)
1 cup yogurt
1 tbsp crushed coriander seeds
½ tsp black pepper powder
½ tsp Himalayan pink salt (or to taste)
1 tsp garam masala powder
½ tbsp roasted & crushed cumin seeds
1-inch piece ginger
3-4 garlic cloves
2-3 green chillies
2 tbsp lemon juice
150ml Olper’s cream (room temperature)
½ cup water (or as required)
1-2 tbsp fresh coriander
8-10 mint leaves
3-4 tbsp cooking oil
handful of chopped fresh coriander
1-2 sliced green chillies

In a chopper, add chicken, onion, green chillies, garlic, ginger, red chilli powder, coriander seeds, cumin seeds, crushed red chilli, pink salt, garam masala powder, fresh coriander, mint leaves, clarified butter & chop well & refrigerate for 30 minutes.

Grease hand with oil, take a mixture (50g) & make kababs on wooden skewers.

In a pot, heat water, place steamer grill & kababs, cover & steam cook on low flame for 8-10 minutes.

Let them cool completely. Can be stored in an airtight container for up to 1 month in freezer (makes 18-20).

In a jug, add yogurt, coriander seeds, black pepper powder, pink salt, garam masala powder, cumin seeds, ginger, garlic, green chillies, lemon juice, cream, water, fresh coriander, mint leaves, blend well & set aside.

In a large griddle, add cooking oil & fry steamed cooked kababs (10 kababs) on medium flame from all sides until golden then cut all the kababs in 1-inch pieces & cook for a minute.

Add half quantity of prepared creamy sauce mixture, fresh coriander, green chilli, mix well & cook on medium flame for 4-5 minutes.

Now add remaining creamy sauce mixture, mix well & cook on high flame until oil separates (2-3 minutes).

Sprinkle fresh coriander & green chilli. Garnish with fresh coriander, green chilli & serve with naan!
