Russian Pancakes
Cultural Context
Originating from Russia, these pancakes, known as blini, are traditionally served during Maslenitsa, a festival marking the end of winter. They symbolize the sun and are often enjoyed with various fillings and toppings. Today, Russian pancakes have gained popularity worldwide, with numerous variations reflecting local tastes.
In a large bowl, whisk together flour, baking powder, salt, and sugar.
In another bowl, beat the eggs and then add milk and water, mixing until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Add melted butter and vanilla extract to the batter, mixing until smooth.
Heat a non-stick skillet over medium heat until hot.
Pour a ladleful of batter into the skillet, swirling to spread evenly.
Cook until bubbles form on the surface, about 2-3 minutes.
Flip the pancake and cook for another 1-2 minutes until golden brown.
Transfer the pancake to a plate and keep warm while cooking the remaining batter.
Serve pancakes warm with sour cream, jam, fresh fruit, or maple syrup.
Dust with powdered sugar if desired before serving.
