This drink has regional variations across India, with different spices and ingredients reflecting local tastes.

Ground mustard can be a healthier option while yellow mustard seeds are more economical.
Chop 3 medium-sized purple carrots into sticks.
Peel and chop 1 medium-sized beetroot into sticks.
Grind 1 tablespoon of mustard seeds in a mixer until it looks mustard yellow.
Take a 2-liter glass jar and add the ground mustard.
Add 2.5 tablespoons of salt to the jar.
Add 0.5 teaspoon of red chili powder to the jar.
Top the jar with about 1 liter of water, ensuring all powdered ingredients are mixed well.
Add the chopped carrot sticks and beetroot to the jar.
Add an additional 0.5 liters of water to ensure the vegetables are completely submerged.
Cover the jar with a clean cloth and secure it with a rubber band.
Place the jar in a warm spot on the kitchen counter for fermentation.
Check the kanji daily, giving it a stir and tasting from day three to check for sourness.
