材料を計量する。
強力粉、薄力粉、砂糖、食塩を混ぜる。
ドライイーストを加えて再度混ぜる。
全卵、牛乳、水を加えて粉気がなくなるまで混ぜる。
こね台に出して約5分間こねる。
生地がまとまり始めたら、台に叩きつけるようにして2分間こね続ける。
バターを練り込む。
生地が滑らかになるまでこねる。
ボールに戻し、熱湯が少量入ったボールの上に置いて発酵させる。
60分後、ガス抜きをする。
生地を軽く叩いて向きを変え、上から巻く。
ラップで包み、冷蔵庫で30分休ませる。
50gのバターをラップで包み、15cm四方に伸ばす。
生地とバターを冷蔵庫から出す。
生地を伸ばし、バターをのせて包む。
生地を伸ばして、最終的に30cm x 60cmにする。
カルダモンパウダーとグラニュー糖を生地に振りかけ、半分に折りたたむ。
包丁で約2cm幅にカットする。
生地を引っ張って長く伸ばし、指に巻きつけて形を整える。
整形した生地を天板に並べ、布巾をかけて60分発酵させる。
溶き卵を塗る。
230度に予熱したオーブンで12分間焼く。
焼き色が付いたら完成。
