Rinse and strain shrimp. Feel free to devein your shrimp.

Pat shrimp dry with a paper towel. This will prevent a soggy flour coating for optimal crunchiness! Also, hot oil and water don't mix.

Prep 2 jalapenos, 4 cloves garlic and 2 green onions (set aside).

In a large mixing bowl, evenly coat shrimp in 2 cups of flour.

Heat oil to 375F. If you don't have a thermometer, use the Chinese method. Insert a chopstick or wooden utensil into the oil. If bubbles rise, your oil is ready.

Fry shrimp for 1.5 to 2 minutes depending on desired crunchiness (set aside).

Melt 2 tbsp butter in a hot pan.

Add and cook your jalapenos, garlic and green onions until slightly brown.

Add 1 tsp salt & 1 tsp pepper.

Add your shrimp and toss/mix everything.
