Tiramisu, originating from Italy, is a beloved dessert known for its rich layers of coffee-soaked ladyfingers and creamy mascarpone. The Tiramisu Pound Cake is a delightful twist on the classic, combining the flavors of tiramisu into a moist cake format. This version has gained popularity for its ease of preparation while still delivering the iconic taste of the traditional dessert.
Prepare the pound cake batter by mixing softened unsalted butter (110g), granulated sugar (80g), and salt (2g) until smooth.
In a separate bowl, crack in 2 eggs (about 90g) and add 1 egg yolk (about 15g), whisking them together. Gradually add this mixture to the butter mixture in 6-7 additions, mixing well each time to prevent separation.
Sift in cake flour (120g) and baking powder (3.5g), and fold gently with a rubber spatula. Add mascarpone cheese (68g) and mix well.
Divide the batter in half; sift cocoa powder (11g) into one half and mix. Transfer both batters into piping bags. Pipe the cocoa batter into the prepared mold, smoothing it out, followed by the plain batter on top, and smooth again.
Preheat the oven to 170°C (338°F) and bake for 25-30 minutes. Once baked, remove from the mold.
Prepare the coffee liquid by mixing instant coffee powder (3.5g), granulated sugar (20g), coffee liqueur (7g), and boiling water (40g) in a bowl until the sugar is completely dissolved. Brush this mixture over the warm pound cake and let it cool.
Make the cheese cream by mixing softened unsalted butter (50g), cream cheese (30g), and powdered sugar (30g) until smooth. Then add mascarpone (85g) and coffee liqueur (3g) and mix well.
Once the pound cake has cooled, pipe the cheese cream on top and generously dust with cocoa powder.
