Prepare tamarind by mixing 90 grams of tamarind paste with 120 milliliters of boiling hot water, stir and let sit for a few minutes, then strain through a mesh strainer.
Peel and thinly slice 50 grams of garlic and cook in oil over medium heat until toasted and golden brown, then remove and drain on paper towel.
Add 100 grams of sliced beef to the same oil and cook until golden brown, then remove and drain on paper towel.
Add 100 grams of sliced shallots to the oil and cook until golden brown, then remove and drain on paper towel.
Add 50 grams of chili to the oil and fry for about 20-30 seconds until fragrant, then remove and drain on paper towel.
In a food processor, combine the fried garlic, shallots, and chili until you get a fine but slightly crumbly mixture.
In a pot, add palm sugar and stir constantly until dissolved, then stir in the chili mixture and fish sauce, letting it simmer while stirring often.
In a medium stockpot, add shrimp heads and shells, cover with water, and bring to a boil, then lower heat and simmer until reduced, then strain to get shrimp stock.
In the same pot, add two stalks of sliced lemongrass and the garlic from earlier, then add the shrimp stock and bring to a light simmer.
Add 7 King oyster mushrooms to the pot and cook for 15 minutes, then add peeled and deveined shrimp and cook for 2-3 more minutes until shrimp is cooked.
Add 55 milliliters of fish sauce and 3 tablespoons of lime juice, adjusting to taste, and add fresh cilantro just before serving.
