1 cup self-raising flour

3 rashes double smoked bacon

Crack 1 egg into a bowl.

Add 1 cup of buttermilk to the bowl.

Add caster sugar and vanilla essence, then mix to combine.

Add 1 cup of self-raising flour and mix until thick batter consistency is achieved.

Gently mix in fresh blueberries, saving some for garnish.

Heat a crepe pan on low heat and melt a knob of butter in it.
