In a large bowl, combine the pork chunks with salt, black pepper, cumin, paprika, and minced garlic. Mix well to coat the meat evenly.

Add the chopped onion, orange juice, and water to the bowl. Stir to combine and marinate for at least 1 hour, preferably overnight in the refrigerator.

Heat the vegetable oil in a large pot over medium-high heat.

Add the marinated pork to the pot, searing the meat on all sides until browned.

Reduce the heat to low, cover the pot, and let it cook for about 1.5 to 2 hours, stirring occasionally, until the pork is tender.

Once the pork is tender, remove the lid and increase the heat to medium-high to allow the liquid to evaporate and the pork to crisp up, about 10-15 minutes.

Stir frequently to prevent burning, until the pork is golden brown and crispy.

Remove from heat and stir in the chopped cilantro before serving.
