1/2 tbsp yellow corn flour
1/2 tbsp fine breadcrumbs

Clean the liver by removing the membrane and veins, then cut into bite-size cubes.

Slice the onion, rub with some salt, rinse and drain.

Add chopped parsley and ground sumac to the onion, mix well.

In a large bowl, combine 1 heaping tablespoon flour, 1/2 tbsp breadcrumbs, and 1/2 tbsp corn flour.

Add a pinch of pepper, sweet paprika, and salt to the flour mixture, mix well.

In a large pan, heat enough sunflower oil to reach halfway up the liver pieces.

Transfer liver pieces into the flour mixture, working in batches if needed, and toss gently until well coated.

Take one handful of liver pieces, shake off excess flour, and carefully transfer into the hot oil.

Repeat the same process, being careful not to overcrowd the pan.

Using a spoon, gently turn the liver to ensure it doesn't burn and maintains a nice color.

Cook over medium heat until well done, about 3.5 minutes per batch, ensuring the flow of blood out of the liver has ended.

Using a slotted spoon, transfer cooked liver to a plate with paper towels.

In between batches, turn off the heat if needed and scrape any burnt bits from the pan, discarding them.

Place the pan back over medium heat and repeat the cooking process.

Sprinkle a pinch of cumin and salt to taste over the cooked liver pieces and transfer to a serving plate.
