Peel the honey crisp apples using a knife or peeler.
Quarter the apples and cut out the cores.
Slice the apples about 1/4 of an inch thick.
Add the sliced apples to a pan.
Add sugar, cinnamon, salt, corn starch, and fresh lemon juice to the apples; mix gently with a rubber spatula.
Cook the apple mixture until the apples are just barely tender, adding a little water if they aren't juicy enough.
Set the cooked apples aside to cool.
Prepare the crumble topping by mixing melted butter with other ingredients (link provided in video for details).
Roll out the thawed puff pastry to be 2 to 3 inches larger than its original size.
Place the rolled puff pastry onto a parchment lined baking sheet.
Set the cooled apple mixture in the middle of the puff pastry, leaving about an inch around the edges.
Spread the crumble topping evenly over the apples.
Optionally brush the edges with an egg wash for a golden crust.
Bake in the preheated oven until the puff pastry is golden and the apples are tender.
Cut the baked pie into rectangles or squares and serve hot or cooled.
