Whole wheat flour adds fiber.
Combine flour, sugar, salt, cinnamon, and nutmeg in a bowl.
Cube the butter before adding it to the flour.
Add the cubed butter to the flour and gently toss to coat with flour.
Use a pastry blender to cut the butter into small pieces until it resembles coarse crumbs.
Stir in enough ice water with a fork until the flour looks like dough, using 6 to 9 tablespoons.
Transfer the dough to the counter and bring it together into a cohesive ball.
Divide the dough in half, shape each half into a ball, and flatten slightly.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Roll out one ball of dough into a 12-inch circle on a lightly floured surface.
Place the rolled dough into an ungreased 9-inch pie plate and press it firmly against the bottom and sides.
Trim the crust to 1/2 inch from the edge and refrigerate again.
Peel and slice the apples, using a mix of Granny Smith and Honey Crisp.
Combine all filling ingredients and toss lightly to coat the apples.
Spoon the apple mixture into the prepared crust and refrigerate.
Roll out the remaining pie dough into a 12-inch circle.
Unroll the dough over the filling and trim the edges.
Seal and crimp the edge of the pie crust.
Cut five large slits in the top crust to let steam escape.
Brush the top with melted butter and sprinkle with sugar, optionally using sparkling sugar.
Bake for 45 to 55 minutes, checking after 35 minutes for doneness.
The pie is done when the crust is a deep golden brown and juices begin to bubble up.
Cool the pie to let the juices set before serving.
