1/4 to 1/2 cup (60 - 120 ml) icy cold filtered water
3 pounds (1.3 kg) tart apples (about 5 large), peeled, cored, and cut into 1/4 inch (.6 cm) thick slices
1 tablespoon lemon juice
1/4 cup (50 grams) granulated white sugar
1/3 cup (65 grams) light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/4 teaspoon (1 gram) salt
1 1/2 tablespoons (15 grams) cornstarch
2 tablespoons (25 grams) butter, cut into small pieces
1 large (50 grams) egg

In a food processor, place the flour, salt, and sugar and process until combined. Add the butter and process until the mixture resembles a coarse meal.

Add about 1/4 cup (60 ml) water and process until the pastry just holds together when pinched. If necessary, add more water.

Turn the dough onto your work surface and gather it into a ball. Divide the dough in half, flattening each half into a round, cover with plastic wrap, and refrigerate for about one hour or until firm.

After the dough has chilled sufficiently, remove one portion of the dough from the fridge and roll the pastry into a 12 inch (30 cm) circle. Transfer to a 9 inch (23 cm) pie pan, trim the edges, and refrigerate.

Remove the second round of pastry and roll it into a 12 inch (30 cm) circle. Transfer to a parchment-lined baking sheet and refrigerate.

In a bowl filled with apples, add the lemon juice, granulated white sugar, light brown sugar, ground cinnamon, nutmeg, salt, cornstarch, and mix well.

Pour the apple filling into the chilled pie crust. Dot with butter. Place the top crust over the apples, tuck excess pastry under, and crimp the edges.

Preheat the oven to 425 degrees F (220 degrees C).

Brush the top of the pie with egg wash and sprinkle with sugar.
