Whole wheat flour adds fiber.
Wash the apples.
Peel the apples using a knife.
Slice the apples to a medium thickness.
Place the apple slices in a bowl.
Add 3/4 cup of white sugar, 1/4 teaspoon of salt, 3/4 teaspoon of ground cinnamon, 1/8 teaspoon of nutmeg, 2 tablespoons of all-purpose flour, and 2 tablespoons of lemon juice to the apple slices and mix.
Let the mixture sit for 20 to 45 minutes to extract juices.
Cut 1.5 sticks of cold butter into cubes.
In a food processor, combine 2 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of baking powder, and 1 tablespoon of sugar.
Add the butter and pulse to mix.
Add ice-cold water, 1 tablespoon at a time, until the dough is well mixed.
Flour the working surface and dump the dough out.
Form the dough into a disc and place it in a zip-lock bag in the freezer for 20 minutes.
Drain the liquid from the apple mixture and place it in a saucepan.
On medium-low heat, add 2 tablespoons of cornstarch mixed with a little water to the saucepan to thicken the mixture.
Once thickened, remove from heat and add 1/2 stick of butter, whisking to combine.
Let the mixture cool and then mix it with the apples.
Grease the pie pan and take the dough out of the freezer.
Divide the dough into two pieces for the top and bottom crusts.
Roll out the bottom dough until it's 1-2 inches larger than the pie pan.
Transfer the bottom crust to the pie pan and trim excess dough.
Add the apple filling to the crust.
Roll out the top dough and place it over the filling, trimming excess dough again.
Crimp the edges of the pie crust using fingers.
Make slits in the top crust for ventilation.
Brush the top with egg wash and sprinkle with sugar.
Place the pie in the oven at 425°F for 20 minutes.
After 20 minutes, reduce the temperature to 375°F and bake for an additional 30 minutes.
Let the pie cool for 2 hours before serving.
