185 grams of cold, diced butter
1 tablespoon of white sugar
1 egg yolk
1/3 cup of cold water (80 mL)

Peel and cut 1 and 1/2 kilos of green apples in half, then quarters, removing the core and any bad bits.

Put the apples in a pot and add 1 teaspoon of finely grated lemon, 3 tablespoons of sugar, 1/2 teaspoon of cinnamon powder, and 1/2 cup of water.

Bring the mixture to a boil, then cover and cook for about 5 to 10 minutes until the apples are just tender but still holding their shape.

Drain the apples and set them aside to cool completely.

In a bowl, mix 1 and 1/2 cups of plain flour, 3/4 cup of self-raising flour, 1/3 cup of cornstarch or corn flour, and 1/3 cup of custard powder.

Add 185 grams of cold, diced butter to the flour mixture and rub it in using your fingertips until combined.

Add 1 tablespoon of white sugar, 1 egg yolk, and 1/3 cup of cold water, mixing to form a firm dough.

Wrap the dough in cling wrap and refrigerate for 1 hour.

Preheat the oven to 200°C fan forced or 220°C without a fan.

Lightly flour your workbench and divide the dough into just over half for the base.

Roll out the pastry and place it in a 23 cm diameter glass pie dish.

Spread a couple of tablespoons of apricot jam over the base of the pie.

Once the apples are at room temperature, place them on top of the jam.

Roll out the remaining pastry for the top of the pie.

Moisten the top of the apples with a few tablespoons of the reserved liquid from the apples.

Whisk the reserved egg white and brush it on the underside of the top pastry before placing it over the apples.

Seal the edges of the pie, trim any excess pastry, and crimp the edges together.

Decorate the pie with leaves or a circle in the middle, if desired.

Brush the entire pie with the remaining egg white and sprinkle liberally with white sugar.

Make a few slits in the top of the pie to allow steam to escape.

Bake in the preheated oven for 20 minutes, then reduce the temperature to 160°C with a fan or 180°C without a fan and cook for another 20 to 25 minutes until golden brown.

Let the pie cool slightly before slicing.
