Mix flour, sugar, and salt in a bowl.
Add tablespoon-sized chunks of vegan shortening to the flour mixture and combine with a fork until crumbly.
Pour in dairy-free milk and vanilla extract, and stir until combined.
Use hands to form a ball of dough.
Lay parchment paper down, sprinkle flour on top, and place the dough ball on it.
Roll out the dough into a circle about an inch larger than the pie pan.
Flip the dough over into the pie pan and tuck the edges in, trimming any excess.
Peel the apples and core them using a knife or coring device.
Slice the apples about a quarter inch thick.
Add apple slices to a large pot and mix in brown sugar, cane sugar, maple syrup, nutmeg, salt, vanilla extract, cinnamon, cardamom, lemon zest, and lemon juice.
Stir the mixture and cook for about fifteen minutes, stirring occasionally.
Add arrowroot powder and combine well before removing from heat.
Let the apple mixture cool to room temperature on a baking sheet.
Layer the cooled apple mixture evenly in the pie crust.
Prepare another pie crust for the top, either by making a design or covering it entirely with slits for ventilation.
Sprinkle sparkling sugar on top of the pie before baking.
Bake the pie until the crust is golden brown, adjusting time as needed.
