Roll out the chilled vegan pie dough until it's 12 inches, rotating it to prevent sticking.
Transfer the rolled-out dough to a 9-inch pie dish, pressing it into the corners.
Peel, core, and slice the apples thinly.
Mix the sliced apples with cane sugar, brown sugar, cinnamon, nutmeg, and lemon juice until thoroughly combined.
Combine cornstarch with water and stir until smooth.
Melt vegan butter in a pot and add the apples, then add the cornstarch slurry.
Roll out a second vegan pie crust and cut it into thin strips, about 1 inch wide, for the lattice top.
Add the simmered apples to the bottom pie crust and level them out.
Layer a row of strips across the pie crust for the lattice, pulling back every other strip to the halfway point and layering another row of strips in a perpendicular fashion until the end of the pie crust.
Rotate the pan and repeat the lattice pattern on the other side, adjusting strips for even spacing.
Cut around the edges with kitchen scissors to ensure they are even, then tuck the dough under around the edges for easier crimping.
Crimp the edges as desired, such as fluting.
Brush the top with soy milk and sprinkle with cane sugar.
