1.5 cups washed basmati rice
1 tsp butter
3 cups chicken stock

Dice 1 large onion.

Finely chop 4 garlic cloves.

Mix 1 tsp chili powder, 1 tsp ground cumin, 1/2 tsp ground coriander, 1/4 tsp turmeric, 1 tsp salt, 1 tsp ground black pepper, and 1 tbsp garam masala in a bowl.

Season 5 chicken thighs with half of the spice mix, coating both sides, and massage with olive oil.

Heat about 1 tbsp olive oil in a heavy iron pot.

Add garlic, 2 bay leaves, 5 cardamom pods, and 1 cinnamon stick; fry for 2 minutes.

Remove ingredients into a bowl.

Add 1 tbsp oil and place chicken skin side up in the pot; fry until golden brown, about 3-5 minutes, then flip.

Take chicken out of the pot and add onions back in along with 1 chopped capsicum and 1/2 tsp salt.

Add the rest of the spice mix and 1.5 cups washed basmati rice; mix gently to avoid breaking the rice.

Add 1 tsp butter and 3 cups chicken stock; place chicken on top skin facing up.

Cook for 30 minutes on low heat.
