Add a lot of water to the pot and cook until the beef is tender.
Prepare a besan (gram flour) curry by heating oil and adding besan, sautéing until well mixed.
Boil the noodles separately and set aside.
Add fried garlic to the besan curry, then pour in the coconut milk and crushed red chili, adding a bit of salt.
Combine the boiled noodles with the beef curry and coconut curry in a bowl.
Top with chopped coriander, scallions, chopped green chilies, fried garlic, and fried onions.
Finish with a squeeze of lemon juice and add crispy papdi or chili chips for crunch.
