Add the butter, sugar, honey, to a bowl. Put the bowl on bain-marine and mix to melt all the ingredients. Take the bowl from bain-marine, add the baking soda, and mix. The mixture will grow and will be foamy. Let the mixture cool.

When the mixture is warm, add the egg and mix.

Gradually add the flour and form the dough.

Cut the dough into 10 pieces and roll them out with a rolling pin. Form 20 cm sheets. Bake them at 180C for about 4-5 minutes or until golden brown. Let them cool.

In a bowl mix the whipping cream. Gradually add the sugar. When firm peaks form, add the sour cream and mix just to combine all the ingredients.

Assemble the cake. Put the cake in the fridge for a minimum of 6 hours. The longer it stays in the fridge, the softer it will be.

Blend the remaining baked sheets into crumbs and use them to decorate the cake!
