To a tall saucepan over low heat, add some butter.
Once the butter starts to melt, add honey and sugar.
Stir constantly until everything is combined and dissolved, then bring to a simmer for about a minute.
Add baking soda and whisk immediately; the mixture will bubble and double in volume.
Stir until the mixture turns from pale yellow to a deep honey color, then turn off the heat.
Let the honey mixture cool for about 5 minutes before adding the eggs.
Whisk the eggs and add them slowly to the honey mixture while whisking constantly.
Add flour and salt in three additions, mixing until the dough pulls away from the sides of the pan.
Transfer the dough to a lightly floured work surface and bring it together without kneading.
Chill the dough in the fridge for about 20 to 30 minutes to make it easier to roll out.
Roll out each layer of cake individually as thinly as possible, using parchment paper or silicone mats.
Poke holes in the layers with a fork before baking.
Preheat the oven to 160°C (320°F) and bake each layer for 5 minutes until soft.
Let the layers cool completely after baking.
To make the frosting, combine heavy cream, yogurt, vanilla, and sugar in a bowl and whip until medium to stiff peaks form.
Dip each cookie layer in milk for a few seconds before adding a thin layer of cream frosting.
Use a piping bag or ice cream scoop to portion out each layer of cream evenly.
Repeat the process until all layers are assembled, then refrigerate the cake overnight.
Trim the sides of the cake before serving.
Cut the cake into thin slices and optionally dust the top with cake crumbs or nuts.
