1 star anise
4 black cardamoms
6 cardamoms
6 cloves
10 peppercorns
1 tsp shah jeera
1 cup fried onions
3 tsp ginger and garlic paste
1 tsp red chili powder
1/2 tsp turmeric powder
2 tsp garam masala
1 tbsp sliced green chilies
1/2 cup yogurt
1 tbsp coriander
1 tbsp mint
500ml water (for mutton)
1 tbsp ghee (for final mixture)

Start by grinding the lentils, pulses, and greens until coarse.

In a sauté pan, melt 1 tbsp of ghee and add the ground mixture, sautéing lightly.

Add 500ml of water to the mixture and bring to a boil, stirring occasionally.

Cook for 15 to 20 minutes, adding more water as needed to prevent burning.

Marinate 500 grams of mutton with juice of half a lime and salt.

In an instant pot, heat 1 tbsp of ghee and 2 tbsp of oil, then add whole spices and sauté until fragrant.

Add the marinated mutton and sauté until browned.

Add 1 cup of fried onions, 3 tsp of ginger and garlic paste, and powdered spices, mixing well.

Stir in 1/2 cup of yogurt, 1 tbsp of coriander, and 1 tbsp of mint.

Add 500ml of water and pressure cook for 40 minutes.

After cooking, set to sauté mode to dry up the gravy for 10 to 15 minutes.

Shred the cooked mutton and mix with the lentil mixture, adding water as needed to achieve desired consistency.

Cook for an additional 10 to 15 minutes, stirring continuously to prevent burning.
