4 conch washed and sliced
2 eggs beaten
1 cup milk
1 cup cornmeal
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp ketchup
1 tbsp mayonnaise
1 tbsp lime juice freshly squeezed
3 pounds chicken parts (legs, thighs, wings)
2 tsp onion powder
2 tsp garlic powder
1 tsp red pepper flakes
2 potatoes quartered
2 bay leaves
1 large onion sliced
habanero pepper
2 tbsp allspice berries
1.5 limes
1 cassava root peeled and cut
2 celery ribs chopped

Tenderize conch by pounding it with a mallet. Soak in milk for 30-45 minutes.

Put beaten eggs in a bowl. Mix cornmeal, garlic powder, salt, and pepper on a plate.

Remove conch from milk and sprinkle with onion powder.

Heat frying oil in a pot over medium. Dredge conch first in egg, then cornmeal, and fry 2-3 minutes on each side.

Serve with dipping sauce made of ketchup, mayonnaise, and lime juice.

Peel and quarter potatoes, soaking in salt water until ready to use.

Wash chicken in water and white vinegar, drain, and rinse with fresh water.

Add chicken to a pot of salted water and boil for 7-10 minutes. Drain and pour out the water.

Rinse chicken again and add to fresh water. Boil for another 3 minutes, drain, and rinse again.

Add chicken back to the pot with more water, potatoes, bay leaves, habanero, allspice, lime juice, lime rinds, cassava, and salt to taste. Boil for about 15 minutes.

Add celery and cook for 5 more minutes.
