Preheat the oven to 200°C (400°F).
Finely chop the onion and garlic.
Mix the chopped onion, garlic, and diced lamb loin in a bowl.
Season the mixture with cumin, black pepper, and salt to taste.
Add chopped fresh herbs, diced carrot, and potato to the meat mixture.
Roll out the puff pastry on a floured surface.
Cut the pastry into squares or circles, depending on preference.
Place a spoonful of the filling in the center of each pastry piece.
Fold the pastry over the filling and seal the edges by crimping with a fork.
Brush the tops of the pastries with beaten egg.
Sprinkle sesame seeds on top for added flavor.
Arrange the samsas on a baking sheet lined with parchment paper.
Bake in the preheated oven until golden brown, about 25-30 minutes.
