In Uzbekistan, chicken samsa is a beloved variation, showcasing the region's rich culinary traditions. These savory pastries are often served during celebrations and gatherings, making them a staple in Uzbek cuisine. Today, samsa can be found in various forms around the world, reflecting local tastes and ingredients.

Mix flour, water, and salt in a bowl to form a dough.
Knead the dough on a floured surface until smooth, about 10 minutes.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Finely chop the onion and garlic.
In a skillet, heat vegetable oil over medium heat and sauté onion and garlic until translucent, about 5 minutes.
Add ground chicken to the skillet and cook until browned, about 7-10 minutes.
Stir in cumin, black pepper, coriander, and lemon juice; cook for another 2 minutes.
Remove from heat and mix in chopped parsley and salt to taste.
Divide the rested dough into equal pieces and roll each into a thin circle.
Place a spoonful of the chicken mixture in the center of each circle.
Fold the dough over to form a triangle, sealing the edges tightly.
Brush the tops with beaten egg and sprinkle with sesame seeds.
Preheat the oven to 375°F (190°C).
Arrange the samsas on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, until golden brown and crispy.
Remove from oven and brush with melted butter before serving.
