Uzbek Pilaf

3 tablespoons olive oil
3 small onions
6 cloves garlic
3 carrots
2 cups rice
1 tablespoon turmeric
1 teaspoon cinnamon

Melt 3 tablespoons of butter and 3 tablespoons of olive oil in a peow pot.

Add 3 diced small onions and sweat them for 2-3 minutes on medium heat with the lid on.

Add 6 cloves of garlic and shake them in with the onions.

Add 3 carrots and some salt to the mixture.

Add 2 cups of washed and dried rice, mixing well to coat with oil and vegetables.

Add more salt, 1 tablespoon of turmeric, and 1 teaspoon of cinnamon to the rice.

Pour in 3 cups of hot water, cover with a lid, and cook on medium-low heat for 8-10 minutes without opening the lid.

After 8-10 minutes, check if there's water at the bottom; if not, cover with a towel and let sit for another 10 minutes.
