2 tbsp lemon juice
1 cup melon seeds paste

Wash 1 kg chicken and place it in a strainer to dry.

Add 2 tsp ginger-garlic paste and salt to the chicken.

Add enough yogurt (0.5 kg) to fully coat the chicken.

Mix well to ensure the chicken is well coated in yogurt.

Let the chicken marinate for at least 30 minutes or up to 2-3 hours if time allows.

Heat a handi and add 1 cup of water until warm.

Add 3 sliced onions and 25-30 peeled almonds to the handi.

Add 8-10 green chilies and cover to cook until onions are soft, about 15 minutes.

Once soft, remove the onions and blend them with the cooking water until smooth.

In a separate handi, heat oil (0.5 cup) over medium-high heat.

Add whole spices (cumin, cinnamon, bay leaf, green cardamom, black pepper) and fry until fragrant.

Add the marinated chicken with all the yogurt mixture to the handi.

Cover and cook on medium-high heat for 5-8 minutes until water starts to separate from the chicken.

Add the blended onion and almond mixture to the chicken.

Cover and cook for another 5 minutes, stirring occasionally to prevent sticking.

Add 2 tbsp lemon juice and 1 cup melon seeds paste to the chicken.

Season with salt to taste and add water if needed to adjust consistency.

Cover and simmer for another 5-10 minutes until the chicken is cooked through and the sauce thickens.

Optionally, add chopped green onions or bell peppers for garnish.

Close the lid and let it simmer on low flame for another 5-10 minutes until oil surfaces.
