Sweet Sour Tofu Veggie Stir Fry

14 oz firm tofu, drained and pressed
1/4 cup soy sauce
2 tbsp vegetable oil
2 tbsp cornstarch
1/4 cup rice vinegar
2 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/4 cup green onions, chopped
2 cups mixed vegetables (bell peppers, broccoli, carrots)
1/4 cup sugar
1 tsp ginger, minced
1/4 cup apple cider vinegar
2 tbsp maple syrup
1/4 cup ketchup
1/2 cup water
2 cups rice

Toss the tofu with soy sauce and oil.

Add corn starch, rice flour, and garlic powder to the tofu and toss to coat.

Heat oil over medium-high heat and add the tofu, cooking until browned and crispy. Set aside.

In the same pan, heat oil on medium-high and toast red pepper flakes for a few seconds.

Add onion, bell pepper, and celery to the pan and cook until the peppers start to brown.

Add garlic and stir to mix it in well.

Add apple cider vinegar, maple syrup, soy sauce, and ketchup to the pan and bring to a boil.

Add cornstarch mixed with water and bring to a boil again.

Add the tofu back to the pan and stir to coat in the sauce.
