Methi Kadhi

1½ cup methi (fenugreek leaves)
2 cups curd (yogurt)
1 tsp coriander powder
1 tsp red chilli powder
½ tsp turmeric powder
½ cup water
½ cup gram flour
3 tbsp mustard oil
1 tsp asafoetida
½ ltr. water
salt to taste
3 tbsp desi ghee
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp coriander seeds
3 dry red chillies
1 tbsp crushed ginger garlic green chilli
1 medium-sized sliced onion
4-5 curry leaves
½ tsp Kashmiri red chilli powder

Prepare the ghol by mixing methi, curd, coriander powder, red chilli powder, turmeric powder, water, and gram flour in a bowl.

Heat mustard oil in a pan and add asafoetida, followed by water to create the base for the kadhi.

Add salt to taste and bring the mixture to a simmer.

In a separate pan, prepare the tadka by heating desi ghee and adding mustard seeds, cumin seeds, coriander seeds, and dry red chillies.

Add crushed ginger garlic green chilli, sliced onion, and curry leaves to the tadka and sauté until the onions are translucent.

Combine the tadka with the kadhi mixture and let it cook for a few more minutes before serving.
