Biscotti (Cantuccini)

Cultural Context

Originating from Tuscany, Biscotti, or Cantuccini, were traditionally made for dipping into Vin Santo, a sweet dessert wine. These twice-baked cookies are a staple of Italian coffee culture, enjoyed for their crunchy texture and nutty flavor. Today, variations abound, with flavors like chocolate and anise, making them a popular treat worldwide.

1

Add 1 cup of white granulated sugar to a large bowl.

2

Add 1/4 cup (4 tablespoons) of very soft unsalted butter to the sugar and blend together with a spatula.

3

In another bowl, crack 2 large eggs and beat them until broken up.

4

Add the zest of 2 oranges and mix well, then add 1 teaspoon of almond extract and 1 teaspoon of vanilla extract.

5

Combine the egg mixture with the butter and sugar mixture.

6

In a separate bowl, add 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1 teaspoon of baking powder, and whisk together.

7

Chop 1/3 cup each of pistachios, dried apricots, toasted almonds, and dried cranberries, then add them to the flour mixture and mix well.

8

Combine the dry ingredients with the wet ingredients, folding them together until a sticky dough forms.

9

Dust a work surface with flour, place the dough on it, and divide it into two equal halves.

10

Shape each half into logs approximately 8-9 inches long, 2.5 inches wide, and 1 inch high, and place them on a lined baking sheet.

11

Preheat the oven to 350°F (180°C) and bake the logs for 30 minutes.

12

Allow the logs to cool for 10-15 minutes before slicing them into approximately half-inch thick pieces.

13

Lower the oven temperature to 300°F (150°C) and place the sliced biscotti back in the oven for a second bake for about 20-25 minutes until golden.
