Biscotti (Cantuccini)

Cultural Context

Originating from Tuscany, Biscotti, or Cantuccini, were traditionally made for dipping into Vin Santo, a sweet dessert wine. These twice-baked cookies are a staple of Italian coffee culture, enjoyed for their crunchy texture and nutty flavor. Today, variations abound, with flavors like chocolate and anise, making them a popular treat worldwide.

1

In a mixing bowl, combine sugar and butter, then cream until light and fluffy for about 5 minutes.

2

Add the eggs one at a time, then add the vanilla and mix until blended.

3

In a separate mixing bowl, combine flour, baking powder, cinnamon, and coffee using a whisk.

4

Add the almond extract to the dry ingredients.

5

Slowly add the dry ingredients to the butter and sugar mixture along with chocolate chips and almonds, combining well but being careful not to overmix the dough.

6

Divide the dough in half and place them on a baking sheet.

7

Shape each half into a 12-inch log and flatten it to be one inch thick.

8

Make an egg wash with 1 egg and 3 tbsp of milk and brush it on top of the logs.

9

Bake at 325 degrees Fahrenheit for about 35 minutes.

10

Let the logs cool completely, then using a serrated knife, cut the logs into half-inch thick slices.

11

Place the cookies cut side up on the baking sheet and bake until they start to turn light brown for about 15-20 minutes at 325 degrees Fahrenheit.

12

Melt chocolate in the microwave and drizzle it over the biscotti.
