Mix 350 g of flour with 0.5 teaspoon of baking soda and 0.5 packet of baking powder in a bowl.
In another bowl, combine 150 g of granulated sugar with 2 eggs and mix until well combined.
If the eggs are large, you can use one whole egg and one yolk instead.
Work the egg and sugar mixture until it becomes uniform in color and texture.
Let the dough rest for about 10 minutes, but if you're in a hurry, you can skip this step.
Prepare a baking sheet with a little sugar and a small amount of water.
Shape the dough into larger pieces, called 'biscottoni', and slightly flatten them.
Dip one side of each biscottone in water and then coat it with sugar.
Place the biscottini on the prepared baking sheet.
Preheat the oven to 180°C (approximately 350°F) and bake for about 20 minutes, checking after 15 minutes for doneness.
