Vietnamese Shaking Beef

Cut beef tenderloin into dainty bite-sized pieces, first into strips and then into chunks.
Create a marinade with garlic, fish sauce, black pepper, and a tiny dash of salt. Mix well and marinate the beef for about 20 minutes.
Prepare the stir-fry sauce by mixing soy sauce, dark soy sauce, fish sauce, vinegar, and sugar. Mix well.
Slice the white part of the spring onion for stir-frying and save the dark green part for garnish.
Prepare a salt and pepper mix with salt and pepper for serving, and mix well.
Heat a wok until super hot, swirling in vegetable oil.
Add the marinated beef to the hot wok, spreading it out to maximize contact with the heat. Let it sear without stirring for a while.
Once the beef has developed a good color, add sliced red onion and the white part of the spring onion, then pour in the stir-fry sauce.
Quickly add a mixture of cornflour and water to thicken the sauce as it bubbles.
Toss in the dark green part of the spring onion for color, then serve the beef over a bed of watercress.
Serve with the salt and pepper mix and a wedge of lime for squeezing over the beef.
