Prepare cauliflower rice by grating cauliflower until it resembles rice grains.
Squeeze out excess moisture from the cauliflower rice using a clean kitchen towel.
Lay a nori sheet shiny side down on a bamboo sushi mat.
Spread a thin layer of cauliflower rice evenly over the nori, leaving a 1-inch border at the top.
Add a line of cream cheese along the bottom edge of the rice.
Layer cucumber, avocado, and smoked salmon on top of the cream cheese.
Sprinkle sesame seeds over the fillings for added texture.
Using the sushi mat, roll the nori tightly from the bottom to the top, pressing firmly as you go.
Seal the edge of the nori with a little water to hold it together.
Slice the roll into bite-sized pieces with a sharp knife, wiping the knife with a damp cloth between cuts.
Serve with soy sauce, wasabi, and pickled ginger on the side.
