1 cup yogurt (250 grams)
3 liters water
3 tablespoons salt (for boiling rice)
1 tablespoon oil (for boiling rice)
1 tablespoon lemon juice
5 cups golden sela rice (soaked for 2 hours)

Mix 1/4 teaspoon red-orange food color with 2 tablespoons water and apply it to 1.25 kg chicken; let it sit for 10-15 minutes.

Wash the colored chicken thoroughly in water.

Heat 1 cup refined oil in a pot until hot.

Fry 3 medium-sized onions until golden brown (pre-fried).

Add 2-3 bay leaves, 1 star anise, 2-3 pieces of cinnamon, 1 large cardamom, 5-6 small cardamoms, and 1 teaspoon black pepper to the oil and crackle the spices.

Add 1/3 cup onion paste (made from 150 grams of onions) and fry for 3-4 minutes.

Add the colored chicken to the pot and sauté on high flame for 3-4 minutes until it changes color.

Mix in 3 tablespoons ginger-garlic paste, 2 teaspoons salt, 1 tablespoon yellow chili powder, 1 tablespoon coriander powder, and 2 tablespoons biryani masala; sauté for 7-8 minutes.

Add 1 cup yogurt and cook on high flame for 4-5 minutes until the yogurt releases water.

Cover the pot and cook the chicken for 20 minutes on low heat until cooked through.

Remove excess oil (about 1/2 cup) from the chicken and set aside.

Boil 3 liters of water with 2 bay leaves, 3 tablespoons salt, 1 tablespoon oil, 2-3 pieces of cinnamon, and 1 tablespoon lemon juice.

Add 5 cups of soaked golden sela rice to the boiling water and cook until 90% done; strain the rice.

Layer the rice and chicken mixture in the pot, adding fried onions, fresh coriander, mint leaves, and green chilies in between.

Pour the reserved oil over the final layer of rice and add the reserved water from the rice (1/2 cup).

Dilute 1 tablespoon of kewra water with red-orange food color and pour it over the top layer.

Cover the pot and cook on high flame for 2 minutes, then reduce to low flame for 10-12 minutes until fully cooked.
