3 medium potatoes, peeled and cubed
1 large onion, finely chopped
2 medium tomatoes, chopped
1/2 cup coconut milk
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

Heat oil in a pan over medium heat.

Add mustard seeds and cumin seeds; let them splutter.

Add chopped onions and sauté until golden brown.

Stir in the chopped tomatoes and cook until soft.

Add turmeric powder, red chili powder, and salt; mix well.

Add the cubed potatoes and stir to coat with the spices.

Pour in the coconut milk and enough water to cover the potatoes.

Cover and cook until the potatoes are tender, about 15-20 minutes.

Once cooked, sprinkle garam masala and mix gently.

Garnish with fresh coriander leaves before serving.
