Prepare the caramel by placing the sugar in the baking dish and evening it out. Drizzle the water over the sugar and microwave for 3 minutes or until it turns deep golden syrup. Tilt to spread evenly and set aside.

If using llanera, add sugar and water to it and place directly over the stove, tilting to avoid burning.

In a large bowl, add the eggs and beat them slowly with a fork or whisk.

Gradually add the evaporated milk and condensed milk while stirring continuously. Add the vanilla extract and mix well.

Sieve the mixture to achieve a smoother texture.

Pour the mixture into the prepared baking dish or llanera, tapping to remove trapped bubbles. Cover with aluminum foil.

For steaming, add water to the bottom pot of a steamer and bring to a boil. Lower the heat to a gentle simmer and place the flan in the steamer basket. Steam for 40-50 minutes, checking with a toothpick.

For baking, place the filled llanera in a hot water bath and bake at 160°C/320°F for about 30 minutes or until a toothpick comes out clean.

Once cooked, let cool and chill in the fridge for at least an hour or overnight. To serve, run a knife around the edges and flip onto a serving plate.
