Cut yuba into long pieces and then into thirds, stack them, and cut into bite-sized triangle-shaped pieces.

Bring a pot of water to a boil.

Add sliced yuba to the boiling water and boil for about 1 minute.

Once the yuba has changed to a paler color, strain it from the water and set aside.

In a large pan, heat vegetable oil over medium to high heat.

Add sliced green and red bell peppers to the pan and cook for about 1-2 minutes until almost cooked through; then remove from the pan.

Once the yuba is heated, add back the cooked peppers.

Pour in 1 tablespoon of light soy sauce, 1 teaspoon of dark soy sauce, and 1 tablespoon of vegetarian oyster sauce.

Dissolve 1 teaspoon of cornstarch in about 1/4 cup of water and add to the pan to prevent sticking after removing from heat.
