1 kilo celery root
juice of 2 oranges

2 medium onions
3 large cloves garlic
2 tablespoons flour
2 cups cold water
3 large potatoes
salt
black pepper
a pinch of chopped parsley or dill

Juice half a lemon into plenty of water.

Add 2 heaped tablespoons of flour to the water and mix well, then set aside.

Cut 1 kilo of celery root into round discs, peeling the skins without going too deep.

Chop the celery coarsely, not too small, and throw it into the lemon water, mixing it from time to time to prevent darkening.

Squeeze the juice of 2 oranges and set aside.

Chop 2-3 large carrots coarsely.

In a wide-bottom pot, heat 3-4 tablespoons of olive oil over medium heat and add the chopped carrots to cook.

Chop 2 medium onions and add them to the pot when the oil turns orange, frying for 2-3 minutes.

Crush 3 large cloves of garlic and add them to the pot along with 2 tablespoons of flour, frying the flour well for 2 minutes.

Add the orange juice to the pot and then add 2 cups of cold water, mixing until no lumps of flour remain.

Chop 3 large potatoes coarsely, making sure they are chopped as big as the celery.

Strain the lemon-water and add the celery to the pot, ensuring the amount of water does not exceed the vegetables.
