Celery Salad with Dates

6 celery stalks cut diagonally
10 pitted dates, chopped
2 chopped green onions
1 to 2 tbsp. sambal œlek (chili paste)
the juice of a lime
1 tbsp olive oil (optional)
Salt to taste
1/4 cup chopped pistachios

In a large bowl, combine the sliced celery, chopped dates, and chopped walnuts.
