Remove the head and leaves from one stalk of celery.
Rinse clean each stem of the celery.
Use a peeler to remove the fibers from the celery.
Slice the celery diagonally.
Julienne two slices of ginger.
Dice two to three cloves of garlic.
Place the celery in boiling water and add a quarter teaspoon of sugar.
Stir the celery in boiling water briefly, then remove it with a strainer.
Do not leave the celery in the boiling water for too long to avoid overcooking.
Add two tablespoons of oil to the wok on high heat.
Add the garlic and ginger to the wok and sauté briefly to release their flavors.
Turn the heat to medium and add the celery.
Add one small pinch of salt for flavor.
On the side of the wok, add one tablespoon of rice cooking wine and one teaspoon of fish sauce.
Add one tablespoon of oyster sauce and quickly stir-fry everything together to mix the seasonings into the celery evenly.
Plate the celery and sprinkle some toasted sesame seeds on top.
