1

Break the block of firm tofu into bite-sized pieces with your hands.

2

Add the tofu pieces to a bowl.

3

Add soy sauce, salt, black pepper, grated garlic, cayenne pepper, and a bit of cornstarch to the bowl with the tofu and mix to combine.

4

Prepare the sauce by mixing brown sugar, soy sauce, rice vinegar, sesame oil, ketchup, agave, and water in a separate bowl.

5

Prepare a cornstarch slurry by mixing cornstarch with water in another bowl.

6

Heat oil in a skillet until hot enough for frying.

7

Add enough cornstarch to the marinated tofu to coat everything, about 2 to 3 tablespoons, and mix carefully.

8

Test if the oil is hot enough by adding a wooden spatula; if bubbles form around it, the oil is ready.

9

Fry the tofu pieces in batches for about 3 to 5 minutes until golden brown and crispy, avoiding overcrowding the pan.

10

Remove the fried tofu and let it drain on kitchen paper towels.

11

In a clean pan, heat the prepared sauce and cook for about 2 minutes.

12

Add the cornstarch slurry to the sauce immediately while stirring to prevent lumps, and cook for about 1 minute until it thickens.

13

Add the crispy tofu to the thickened sauce and mix well to combine.

14

Garnish with toasted sesame seeds and spring onion before serving.
