1

Roast 5 tbsp of urad dal until golden brown and cool completely.

2

Transfer the cooled urad dal to a mixer jar and grind it to a fine powder.

3

In a mixing bowl, combine 2 cups of rice flour, the ground urad dal powder, 1 tsp of salt, 1 tsp of chili powder, 1 tsp of sesame seeds, and 1/2 tsp of asafoetida.

4

Mix all the dry ingredients together.

5

Add 2 tbsp of ghee to the mixture and mix well.

6

Gradually add water a little at a time and mix until a moist dough forms.

7

Immediately after making the dough, grease the murukku press.

8

Fill the murukku press with the dough using a star-shaped plate.

9

Heat oil in a deep pan over medium-low heat for frying.

10

Check the oil temperature; it's ready when the bubbling stops when murukku is added.

11

Pipe the dough into spiral shapes directly into the hot oil using the greased spatula.

12

Fry until golden brown, adjusting time based on desired color, about 3-4 minutes.

13

If the dough feels dry while piping, dab a little water to adjust the consistency.

14

Remove the murukku when golden and allow to drain on paper towels.

15

Store in an airtight container once cooled.
