Instructions
- 1Rinse split peas under cold water until clear.
- 2Heat olive oil in a large pot over medium heat until shimmering.
- 3Add chopped onion, carrot, and celery; sauté until softened, about 5-7 minutes.
- 4Stir in minced garlic and cook until fragrant, about 1 minute.
- 5Add split peas, vegetable broth, bay leaves, and thyme; bring to a boil.
- 6Reduce heat to low and simmer uncovered until peas are tender, about 45 minutes.
- 7Remove bay leaves and blend soup until smooth using an immersion blender or regular blender.
- 8Return soup to pot and adjust seasoning with black pepper and lemon juice.
- 9Heat through if necessary, then serve garnished with parsley.

- ●4 pieces salted cod fillets (about 6 oz each)
- ●1/4 cup olive oil
- ●1/4 cup unsalted butter
- ●2 cloves garlic, minced
- ●1/4 cup fresh lemon juice
- ●1 tsp lemon zest
- ●1/4 cup fresh parsley, chopped
- ●Salt and pepper to taste
Instructions
- 1Soak the salted cod in cold water for 24-48 hours, changing the water several times to remove excess salt.
- 2Preheat the oven to 375°F (190°C).
- 3Place the soaked cod fillets in a baking dish and drizzle with olive oil. Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- 4While the cod is baking, prepare the lemon butter sauce. In a small saucepan, melt the butter over medium heat.
- 5Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- 6Stir in the lemon juice and lemon zest, and cook for an additional 1-2 minutes.
- 7Remove the saucepan from heat and stir in the chopped parsley. Season with salt and pepper to taste.
- 8Once the cod is done baking, remove it from the oven and drizzle the lemon butter sauce over the top before serving.
