Ingredients

  • 4 pieces salted cod fillets (about 6 oz each)
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. 1Soak the salted cod in cold water for 24-48 hours, changing the water several times to remove excess salt.
  2. 2Preheat the oven to 375°F (190°C).
  3. 3Place the soaked cod fillets in a baking dish and drizzle with olive oil. Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  4. 4While the cod is baking, prepare the lemon butter sauce. In a small saucepan, melt the butter over medium heat.
  5. 5Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  6. 6Stir in the lemon juice and lemon zest, and cook for an additional 1-2 minutes.
  7. 7Remove the saucepan from heat and stir in the chopped parsley. Season with salt and pepper to taste.
  8. 8Once the cod is done baking, remove it from the oven and drizzle the lemon butter sauce over the top before serving.
