250 g salted pork

Soak the yellow peas in twice their volume of water overnight at room temperature. Drain, rinse, and set aside.

Cut the salted pork into cubes.

In a large pot, heat the oil over medium heat. Add the salted pork and brown it until nicely colored.

Add the onion, celery, and carrots. Cook for about 15 minutes, stirring occasionally.

Add the yellow peas and cook for 2 minutes to enhance their flavor.

Pour in the water, add the bay leaves and herbes salées. Bring to a boil, cover, and let simmer over medium-low heat for about 1.5 hours, stirring occasionally, until the peas are tender.
