Heat a stock pot over medium heat and add 1/4 cup of extra virgin olive oil.
After heating the olive oil for about 2 minutes, add 1 small finely diced onion, 1 peeled and finely chopped carrot, 1 thinly sliced celery stick, and 4 roughly minced cloves of garlic.
Mix the vegetables continuously to coat them in olive oil and prevent browning, sautéing for about 4 minutes until the onion is translucent and the vegetables are lightly sautéed.
Add 2.5 cups of cooked chickpeas (400 grams) that have been rinsed under cold running water, along with 1 teaspoon of dried oregano, sea salt, and freshly cracked black pepper. Mix gently to avoid breaking the chickpeas.
Pour in 3 cups of vegetable broth (710 milliliters) and add 1 bay leaf. Raise the heat to high and bring the broth to a boil.
Once boiling, cover the pot with a lid, lower the heat to low medium, and simmer for about 10 minutes to allow flavors to develop.
After 10 minutes, remove the lid, check the consistency, and add more broth if needed. Remove the bay leaf from the soup.
Squeeze the juice of half a lemon into the soup using a sieve to catch any seeds, then give it a final mix.
Transfer some of the soup into a shallow bowl and sprinkle with finely chopped fresh parsley.
